A Little Bit about Frederic…
I was born in Bordeaux France on November 12th 1969.
I then studied for a wine & Spirits Brevet international in Bordeaux-Talence, France ( our college & Year was sponsored by Chateau d’Yquem) and finished 4th in the French young Sommelier Championships of the year in 1989.
I moved to England in 1990, I worked as head Sommelier in a New Hall Hotel in Sutton Colfield for two years where I developed the wine list into a list that won great acclaim in South England.
I then worked for Three years in Dovecliff Hall hotel in Rolleston, Staffordshire as Assistant Manager & Head Sommelier, this property was renowned in the area for their top notch country food, service & Large Wine selection.
I then moved for two years to a Restaurant called Simpsons in Kenilworth under Head Chef / Proprietor Andrea Antona’s careful eyes. As restaurant Manager & Head Sommelier, we won the 1994 Serve and cook Championships at the NEC in Birmingham and that same year, we gained a Michelin Star.
After working in London for 4 years, I then moved to Ireland and started working as a General Manager for almost two years in La Stampa Restaurant where I improved the service with a strict SOP and developed the wine list into a great one.
In 2002, I first met Barry & went along to seven interviews. I joined his team in the famous Brownes Brasserie on St Stephens Green, where I improved the Sop as well as upgrading the Wine list and service.
In 2003 The core team of Browne’s then moved to Peploe’s to open the restaurant as it is now, setting it up from scratch, to become the best Waiter service & Food service in Dublin.
In 2005, With the help of Laurent Caubet, I then started to import our wine directly from France first, developing core relationships with wine makers that we still have on our Wine List now. We visit the most important wine making regions in France & attend Vinexpo in Bordeaux frequently.
In 2009, Laurent & I attended Vinitaly for the first time & every year since, in the view to develop an importation project from Italy. We developed our wine selections further by importing wines straight from regions like Tuscany, Piemonte, Veneto & Puglia with amazing success that still stands now. We are very proud to import directly amazing wines and to have developped incredible relationships with the wine makers themselves.
I have been working for Barry J Canny for 16 & half Years, creating a restaurant that still stands now as one of the best in business in the city with consistent service, Great quality Food and personally selected wines.
