A little bit about Darren
I have spent the last 20 years working front of house in the restaurant business.
I immediately caught the bug and completely fell in love with the restaurant business. I thrived on the intensity of the restaurant during a busy service and I particularly enjoyed the interaction with the guests. Through this initial experience, I also quickly developed a strong passion for food and wine. This experience alone was enough for me to know that my future would be in the restaurant industry.
I then decided to move to Dublin where my plan was to apply to the best restaurants in the city, so I was very fortunate when I landed a role at the much acclaimed L’Ecrivain restaurant. I started there as a Chef De Rang and within 3 years, through various promotions, I became General restaurant manager. I worked at L’Ecrivain for a total of 11 years and for the last two years I was also in charge of the wine programme, which involved presiding over a wine list of over 200 wines.
I am currently the restaurant manager at Peploes wine bistro, and I really enjoy the challenge of working in one of the busiest restaurants in the city. It’s also very refreshing to work with like minded people with a similar passion and work ethic to mine.
I continue to develop my knowledge of wine too, through attending various portfolio tastings and masterclass around the city. I will also start the WSET level 4 diploma in November 2018.
